Favorite easily freezable vegan dishes?

I am expecting my first child in several weeks and I want to be prepared food-wise, especially since we don’t have many delivery options here. I know that my husband and I will probably be so exhausted the first few weeks that we won’t feel like cooking at all.

What are some of your favorite easily freezable vegan dishes?

i love to make and freeze huge batches of marinara sauce, veggie burgers and baked goods (especially muffins for breakfast).

I have a basic 'multi-purpose' mix that I love, which probably originated in a veggie student cookery book about fifteen years ago. Quantities below are for two, but I often cook enough for four and freeze a couple of portions, and it de-freezes and microwaves OK. You can scale up as far as you like - the only limit is the size of your saucepan ( ... )

Chili, bean, and lentil dishes tend to freeze very well. I've also frozen individual-sized pot-pies, potstickers, veggie burgers, cooked vegetables, and fruit. Also ice cream. :)

My big recommendation is to freeze in portion sizes rather than large quantities, so that you aren't forced into eating the same thing for a while to use up what you thawed. Smaller amounts also thaw much faster.

I totally did this before my beeb was born and it was awesome. I made lasagne, chili, pasta sauce, stew and soup and froze them in single-portion-sized tupperwares.
