agar agar

i know recipes call for agar agar flakes or powder.. and i found this in the asian supermarket. i don't know how i would measure it. would i have to grind it up to use it or would it dissolve? i have obviously never used agar agar before ( Read more... )

I use that stuff all the time, it's the same stuff the asian market near me carries. I usually measure it by weight. Figure that it will give about 100x it's weight in liquid a jello like consistency.

Also, I usually cut the stuff with a pair of kitchen shears, or when all else fails a nice sharp nice. Just make sure to simmer it for awhile because the bars take a bit to dissolve.

did the store you go to also have coloured stuff? mine had green & yellow... so if i wanted to make a cup of juice into jello.. i wouldnt have to use that much at all?

Yeah, mine has green, yellow, orange, and I think pink (I'd have to go check). And you definitely wouldn't have to use much at all for just a cup of juice. Also, the second poster's recipes sound delicious as well, I'm going to have to go try those.

ugh. i actually tried the other night with a juice box. so about a cup of juice. and i used about an inch of the agar agar and crumbled it up. i knew it was going to be too much but i figured better than too little. it actually didnt do ANYTHING :(

I use about 2 1/2 cup of liquid per stick. The trick is to soak the stick in the liquid for about 20 minutes before boiling it. I like to get a can of mandarin oranges and use the liquid with water, put all the oranges in a glass dish, and after the agar agar is boiled, pour the liquid inot the dish. It sets pretty quickly.

I've also done it with a mixture of frozen blueberries and frozen mangos and fresh graprefruit. When i did that, i used no additional sugar, but boiled a berry flavored herbal tea and added the agar agar to that for color. after it was all melted, I poured it over the fresh/frozen fruit. It's not sugary sweet, but its hydrating and refreshing and fun and fruity.
