Here's two curry recipes, one is chana masala (spicy chickpeas) and the other is creamy coconut and peanut spinach. I make these often as they are cheap, tasty, and reasonably healthy. The spinach curry is mild, while the chana is hot, they go nicely together with some rice and lime pickle for those who like their food really hot ( Read more... )

I will save these as I do eat cooked foods in the Winter. Thanks

Mmmm, love the sound of the masala, reckon I could do it without the chickpeas if I added something to thicken it a bit?

surely! try potatoes (boil 'em separately til almost done then add), or something like green beans or lentils (though the "chana" part of chana masala does refer to chickpeas, but i change things around like crazy all the time...)

what this person said ^ although I can also recommend cauliflower, pinto beans or kidney beans. The sauce needs something bland in it to bulk it up, as otherwise it'd be way too strongly flavoured. If you're not adding other stuff in, it would be a good idea to use less spices.

When I have a curry out I usually ask them to leave out the vegetables and have a quite a hot one like a Jalfrezi or Madras (just the sauce) and eat it is with an onion bhaji on the side top kind of mop up excess sauce with and mix in the pilau rice too. The recipe sounds delicious so I'm definitely gonna give it a go. Love curry so much. I'll let you know if it cortirises my mouth without the veggies.
