Interesting. I'd only seen these in India before, and didn't know what to call them in English OR manage to remember the Hindi name. My favorite was to stir fry with onion and garlic, maybe some Indian seed spices, and garnish with lots of parsley or mehti (fresh fenugreek?).

Winter melon juice is AWESOME. I've only ever had it from a can, and the only recipe I can find is "Use a lot of winter melons. Cut into cubes boil with brown sugar, drain the juice and serve it as a cold drink."

It cooks up in stir fry recipes really nicely, as well! Ginger goes well with the flavor.

In Australia, they're called Winter Melon. I'm not sure if I'm confusing it with another melon (Bitter Melon?) but you might be able to use it to make mock shark fin soup.

This page looks fairly informative:

Please let us know how any recipes turn out. I've never actually tried it before.

you're correct; they're winter-not bitter.

yep, but is bitter melon the one that is used to make "shark fin" soup?

use them like zucchini, skins, seeds, and all. I've only used it cubed up in soup, but i'm sure you can cut it in discs for lasanga type noodles?

I've heard them called winter melon. I often ate it braised with bamboo shoots in China.
