Yeah, I put butternut squash in soup with tomatoes and ginger, I guess acorn squash could work in a similar capacity!

roasting it with apples and ginger and maybe a little sugar or maple syrup.

roast halves, fill it with wild rice and chickpeas and sweet fruit (apple, cranberry, raisins?) and put it back in the oven for another 20 minutes or so (maybe add a little veggie broth or 'butter'?)

I have two of them at home, waiting for me to do something to them. I'm just not in the mood for orange food lately.

I don't know why, but despite the fact that I'm not a big FAN of orange foods, I'm often "in the mood" for them. Must be some vitamin or mineral I need...

This seems obvious, but...mix it with something else? Pureed into mashed potatoes? Diced into chili?

You know, I've never actually thought of mixing it with mashed potatoes! That's a pretty great idea. I'm planning on making shepherd's pie on Friday, maybe it'd be good mixed with potatoes on top of that!

I like pureed cauliflower as kind of a sub for mashed potatoes, but Manfriend isn't quite on board, so we compromise by mixing.

i honestly love it just baked in halves and then filled with your favorite butter (omg the Soy Free Earth Balance is SO GOOD), cinnamon, and brown sugar (i was out of brown sugar two nights ago tho and used white sugar and molasses and it was great and iron-rich). i keep trying to fill it with mixed veggies and tempeh or something (the veganized version of how someone suggested it to me when i bought some at a farm one time), but i love it sweetened so much i can't bring myself to do it.

Do you bake it, then add the other stuff? I'm hesitant, because I've never like sweetened orange foods much (like... yams with ugh, marshmallows and stuff) but I guess I haven't tried in forever. Periodic reevaluation of likes and dislikes is always a good idea.

i do bake it first. i cut them in half, scoop out the seeds and guts, and put them face down in a pan of water in the oven at 350F for about 45 minutes. they're probably done sooner, but i like them pretty soft. then i just flip them over into bowls and season them up.

i've also cut them in half and filled them with mixed veggies and rice (kinda like stuffed peppers) and baked them like that for the same time/temp... but i ended up taking out the filling and then adding butter and sugar ;p

i HATE yams with marshmallows-- i always prefer yams and sweet potatoes mashed with butter and brown sugar (or just baked and served with plain old butter).

i agree with reevaluating likes/dislikes-- i do the same thing :)

I made a great chipotle/black bean soup with acorn squash the other day: roast the squash until soft at 400 degrees, saute an onion or two with garlic in a pot, add the squash and an amount of black beans equivalent to or more than the amount of squash. Add cumin, pepper, chipotle, salt, and vegetable stock if you have it, immersion blend if you want, and have it with cornbread muffins!

i agree. i make something similar to this. Or, cut them in half, and roast them with some herbs and a couple teaspoons of vinegar dripped on them. or, roasted in chunks with garlic and cauliflower.
