I'm having some people over for dinner next week and wanted to make the pumpkin baked ziti from V'Con because I've got tons of pumpkin to use up and it seemed like a nice seasonal dish, especially given the weather we're having. The tofu doesn't taste "tofu-y" since it's tofu "ricotta." The other flavors kind of take over.

i have made this in advance and left it in the fridge til baking (for like a day). i agree with the breadcrumb recommendation above.
