V'Con Pumpkin Baked Ziti

I'm having some people over for dinner next week and wanted to make the pumpkin baked ziti from V'Con because I've got tons of pumpkin to use up and it seemed like a nice seasonal dish, especially given the weather we're having. However, I've never made it before because I just got V'Con and had a couple of questions ( Read more... )

You can't really taste it. All the people I've made it for love it. You could certainly make it ahead of time and pop it in the oven.

I would make the sauce and breadcrumbs ahead of time, then boil the pasta and throw it all together in the oven so it comes out fresh, since I find that the pasta does absorb some of the sauce later and it becomes less amazing, though still totally delicious.

And personally, I can't for the life of me taste tofu in there.

You can definitely assemble it ahead of time. I'd actually recommend this as it would give the flavors a chance to meld. However, I wouldn't add the bread crumb topping until right before you cook it so they don't get soggy.

The tofu doesn't taste "tofu-y" since it's tofu "ricotta." The other flavors kind of take over.

you should definitely make this. i now make it for every potluck i can and it is always a huge hit with whomever is eating it. the cashew tofu ricotta is delicious. and not tofu-y at all. in fact, it's great on it's own.

i have made this in advance and left it in the fridge til baking (for like a day). i agree with the breadcrumb recommendation above.

Thanks. I like your idea of not using cashews, but just the broth, pumpkin, and tofu. Now I've just got to find another excuse to cook up a batch of this because I want to try both ways and see which I prefer but I really don't need a tray of baked ziti sitting in my fridge.
