what are your favourite vegan muffin recipes? preferably ones that are somewhat healthy.

also does anyone know how to make muffins huge like this

it looks like they just put too much batter in the pan before baking it. i make jumbo muffins like that all the time on accident by doing that, haha. as for recipes, did you check vegweb.com?

but it looks so nice and crispy. whenever i do it it's hard. i haven't checked yet cause i wanted to know peoples personal favs

if it's hard, you're overbaking it. Try cutting back on the baking time, and see how that does.

Oh, also - muffins tend to dry out pretty quickly, so to keep them fresh longer, definitely try to store them in tupperware or some other type of air-tight storage.

Half carrot, half zucchini and instead of raisins, I add about a cup of muesli--oats, dried fruit and nuts all in one, plus I always have it around.

Oh, I would love to make those! But I don't have any ground flax seed or agave nectar, any idea what I could substitute?

You could try them without the flax and use maple syrup instead of the agave.

The flax seed is probably an important ingredient. It's used to veganize omni recipes in place of eggs and acts as a binder and leavener, I think. You could use a different egg replacer instead.

Candle Cafe Cookbook Lemon Poppy Seed muffins are *Really* tasty. Not super healthy, but you could probably sub applesauce with decent result :)

I just made the almond quinoa muffins from Veganomicon (http://books.google.com/books?id=tjN8uJETBpIC&pg=PT247&lpg=PT247&dq=almond-quinoa+muffins+recipe+veganomicon&source=bl&ots=tyEawZUB4M&sig=i7StoON9kReL9867rIiW72I-iXM&hl=en&ei=th2wSdT0KYnKtQPIotGUAQ&sa=X&oi=book_result&resnum=4&ct=result#v=onepage&q=&f=false) and they were quite good- I used homemade almond milk and white whole wheat flour, to delicious results. They have 1/4 cup oil which isn't too much, but you could probably sub with applesauce or something if you wanted.
