frosting!

I've been making this otherworldly coconut cake lately (sorry, don't have the recipe with me right now) and make a coconut 'buttercream' frosting for it, and then top it with shredded coconut. It's really delicious, but the frosting is too sweet ( Read more... )

Fred Meyer sells a stevia baking blend. It's replaceable cup-for-cup with sugar. If memory serves me correctly, it's fine like powdered sugar. I know it's not granulated, I just don't have any powdered sugar on hand to use as a comparison. You could try using some of that. I don't know if it would make the frosting less sweet, but it would make the frosting different sweet, which might help.

Also, I never add salt to my frosting. My frosting recipes usually call for butter (Earth Balance) and salt. I know salt is a flavor-enhancer, but I don't know if it works on sweet. You might also try leaving the salt out, especially since it's possible (with some elbow grease) to add it in if the taste isn't right without it.

the salt actually seems to make it less blindingly sweet.

I have a little bit of hope actually, with the new soy free earth balance. Part of the reason why THIS frosting is over sweet is because of the lipids I use. They need a lot of things to give them good volume and fluff, and the sugar is one of them.

the cake I'm making uses a lot of brown sugar, so I don't think that it's a really great candidate for pairing with chocolate. I AM thinking of making a straight up coconut ganache concoction though.

If I were you I'd delete the palm oil since that's probably making it more runny and not adding taste, and use only a teeny bit of the coconut milk, just enough to thin AFTER combining the coconut oil and sugar.

If it's still too thin or sugary, I'd second the addition of shredded coconut to add some bulk.

add vegan cream cheese or vegan sour cream to the mix and reduce the amount of coconut oil you are using. you may also want to add coconut extract.

I don't think that creamcheese or sour cream come in soy free varieties. If I'm wrong, please point me in the right way!
