My base recipe was this one (just found by googling):
http://thekidsarealight.blogspot.com/2008/08/spicy-adzuki-bean-burgers.html
but it's not vegan, so I left out the cheese obviously, and I think I played with amounts of ingredients.
I did lettuce, tomatoes, sliced red onion, ketchup, and then my husband used egg-free mayo on his.
We had sweet potato fries and sauteed green cabbage on the side. Oh yes, that reminds me - I left out the potato in the burger recipe because we were having sweet potatoes on the side. I added extra carrots instead.
I've NEVER been great at burgers (I have issues with the whole cooking evenly business), but these were my third attempt (after my first two attempts at black bean burgers), and they were my best yet, so I'm getting better!

Eh yeah I hate fake meats too. I was raised on fruit and veggies, so it tend to be like "*poke*...*pokepoke*....*pokepokepoke*...Are you sure this is edible?" When it comes to fake meats.

Otherwise, there are some other bean recipes you could use this in; I'd suggest checking Just Hungry's sister site, Just Bento, for some other recipes. Good luck!
