Hillbilly Hummus: serious yum from pantry staples

Last night I made Crescent Dragonwagon's Hillbilly Hummus (from her book The Passionate Vegetarian) out of the last of a gigantic pot of black-eyed peas I'd cooked. I make chickpea hummus with peanut butter on a regular basis, and ive noticed the only time the peanut butter really stood out (aside from when i put in wayyy too much), was when there was not enough acid (lemon juice, vinegar, etc). I think that's what cuts that peanutty taste just enough.

also - yay for a Crescent Dragonwagon recipe! I grew up in Eureka Springs, AR. It's a great town with great people (and delicious food, as you can tell).

Thanks for posting and inspiring me to break out the food processor! I made this today with some heirloom black beans, "fresh squeezed" peanut butter and a bit of lime to cut the fat. Simple and delicious!
