Substitute for plain soy milk powder?

Forgot to add "soy milk powder" to the shopping list. Now I have a batch of cupcakes in the oven and would love to make my husband's favorite icing (ala VCTOTW): Super Natural Agave Icing. I *briefly* checked the memories and didn't see anything right off the top of my head, so I ask this: is there anything I can substitute for the plain soy milk ( Read more... )

I have no idea what to sub for soy milk powder, conf sugar is all I can think of, and it would be too sweet. But, you could fancy up the butter cream by reducing some yummy thing down to a syrup and flavoring the butter cream with it.

I've used dark beer, apple cider, peach nectar, currant juice... the possibilities are endless. You just simmer it until it reduces to a thick syrup, and use in place of the soy/rice milk. I use the buttercream recipe from Isa's Vegan Cupcakes Take Over the world.

if you don't mind a fairly strong soy-ish flavour, straight up soy flour will work in a pinch. it does impart a strong flavour, though. really. you'll want to add something like vanilla or lemon juice or cocoa to kind of pare it down.

i made a nice 'raw' frosting out of coconut oil, agave and lemon juice back in june.

I'm not sure if this is what you are looking for but I found a similar question for substitute in icing ala VCTOTW:

this may not help but i can never find soy milk powder in the uk and use almond milk powder instead. i assume any thickener would work maybe with some extra dairy substitute for creaminess.

I used arrowroot once... on accident. It was in the brown rice syrup/caramel stuff in the dulce sin leche cupcakes from VCTOTW. Much to my surprise it came out fine.
