Finding the right kind of cheeze for potato skins...

I've been craving potato skins for a few months now.... The appetizer-type things that are deep fried and covered in cheese, green onions, and crumbled bacon. The last time that I visited my local natural foods store I picked up a bag of rice cheese shreds from Galaxy Foods.I haven't given it a try yet,but I suggest you try them.I love the indiviually wrapped slices whenever I crave a grilled "cheese" sandwich or want cheese on my veggieburgers.

Are you sure the rice cheese shreds are vegan? The only rice shreds Galaxy Foods have listed on their website contain casein.

Yes, I know Galaxy Foods make vegan rice cheese slices. I was talking about the bags of rice cheese shreds.

A homemade cashew "cheese" sauce would probably taste best, and would be way cheaper/healthier than anything you can buy at the store!

With this recipe, I'm trying to go more "authentic" than healthy... With any other recipe I would invite healthier alternatives ;)

I think Cheezly Mozzarella might work well, it melts and has a mild taste. You can order it from veganstore.com, but it would be expensive to get hold of.

Otherwise give follow your heart monterrey jack a try if you haven't and you're willing. I don't like the mozzarella much and the cheddar is icky, but for some reason the jack is my favorite vegan cheeze --- melty and salty and pretty good. even better than teese (though chicago soy dairy is awesome. <3)
