bored with breakfast

Hey all of you helpful people. I am so bored with breakfast. In the winter, we eat hot cereal or muffins most days. Now that it is too warm to bake or eat hot cereal, we are eating cold cereal and occasionally pancakes. But I am really sick of those. We do sometimes have fried potatoes or tofu sausage. Some days I make my kids smoothies.

There are lots of cafes in my area that do scrambled tofu. That's really nice on corn bread or something like that.

Not sure about anything else.. I tend to go for smoothies myself. Using protein powder.

I know that Japanese & Korean food specialties are different, but I'm
wondering if Pajeon is -similar to the Japanese okonomiyaki -

the batter looks similar, but it's not layered. usually pajeon comes in three varieties - spring onion, kimchi, and squid. when i make it at home, i like regular onion, heaps of garlic, shredded spinach and carrot.

oh, if you're the type to indulge in non-dairy yoghourt, i really dig yoghourt with nice soft pitted medjool dates, whole raw nuts, whatever fruit's on hand, and a pile of cinnamon and agave on top. granola weighs me down in the morning, but the dates and nuts give me the same breakfasty comfort without the heavybelly feel.

we have buckets of peaches and nectarines, and i really dig just eating those for breakfast with some orange juice. i also make cornbread "waffles" (sub. corn flour for flour) and eat them with raspberry jam, like a corn gofry. seitan -'greatness, served warm and with maple syrup and some veggies. my dad and i have been known to eat salads and sandwiches ;)

in india, they eat pakoras with ketchup in some places. maybe "pakora pancakes"? it uses almost no oil, which is why i make them that way. think.......a normal pancake, but made with chickpea flour and water. turmeric, cumin, whatever you like, and some chopped onions and greens. ketchup.

I loved those pakoras in the morning. Also welcomed were the masala dosas, which are lentil-flour flatbread rolled around a spicy filling of chickpeas and lentils and other tasty things.

I never knew pakora pancakes existed, thank you for the enlightenment, I sense some breakfast experimentation next weekend! Do you have a favourite recipe?

yeah! like i said, my dad and i don't like to use a lot of oil, so frying is out. i was thinking about pancakes one day, and somehow these came out. they're so nice with ketchup. :) if you're making them ""authetic"" there should be fewer greens, but i like more greens than anything else.

you need 1c or so of chickpea flour, water or broth, sea salt (black or himalayan gives a nice exra flavor), turmeric, cumin. sometimes i've added subji masala, cilantro powder or celery seed as well. 1T oil. a few t of finely chopped onion and a fistful (or more!! :D ) of chopped greens: eg, mint, cilantro, kale, spinach.... mix everything together. add flour and water until it holds and then make a "pancake".

it's very thick. it's much better when you leave it thick than make it pancake thin. i've also tried sauteeing the greens first and then adding it. that works better with something like kale, which really needs to soften, but isn't necessary for cilantro, which cooks pretty fast.
