I've heard good things about Isa's recipe in VwaV. I've been planning to do the same thing actually, and have had this tab open for like three days now haha http://www.epicurious.com/recipes/food/views/Vegetarian-Pad-Thai-240960 Just leave out the eggs and add veggies (carrots, green beans, broccoli, cauliflower). I don't like that the author says to "rinse tofu" though, who does that?
Isa's from VwaV is the best Pad Thai I've ever had - we eat it at least once a week. If I was at home I'd forward the recipe... but alas I'm without a copy at the moment. I hope someone else puts it here for you though!!

1. Pan fry tofu
2. Make a sauce out of all natural peanut butter, a dash of soy sauce, and any asian hot sauce (or onion/garlic/cayenne etc).
3. Mix together, serve with fresh steamed broccoli and rice.
For more effort, cook the sauce in a pan with some coconut milk.. mmmmmmmmmmmm
