You can pretty easily use tofu in the place of eggs in a lot of recipes, my favorite being scrambled tofu, to which you can add whatever veggies, spices and other fun add-ins (chorizo seitan for me! Yum!) you want. You can also use tofu in place of eggs for omelets and frittatas! Thanks so much for your suggestions! I don't generally cook with tofu because I am somehow disastrous at it, but I do love tofu when it's cooked by a pro. It's been quite some time since I gave it a good shot, and I'm much better at cooking in general now, so I definitely think I'll have to try it again. Thanks!

if you're on a tight budget, omit the nutritional yeast unless you can buy it in bulk somewhere.

if you have difficulty cooking tofu, i highly recommend you try this recipe just once. it's amazing. the key is the spices,

Definitely. And also, it's super versatile - you can add Asian type stuff, omit the veggies if you're in a hurry, sub in black beans + salsa if you're feeling southwestern.. it's pretty excellent.

Oatmeal! I second that idea.

I normally add nuts and dried fruit to mine. Both of those can be a bit pricey however oatmeal is just as good with cinnamon in it!

Agreed! Oatmeal, oatmeal, oatmeal. You can get it pretty cheap in bulk bins. Add some peanut butter if you're concerned about protein. Toss in some raisins and bananas, and you're good to go. I exist on oats :)

I don't find oatmeal porridge at all filling without the addition of dried fruit and nuts. But people who eat nuts every day live longer, so I invest in nuts.

That's the same recipe as listed above -- I thought I recognized it! I ♥ Isa's scrambled tofu. It's so flexible, too; you can add or subtract the veggies and it's ALWAYS delicious! :D
