Meal Planning thread

I was posting these last winter, and they were kind of fun, so I thought I'd throw this week's meal plan out to the world:

Apple Pancakes and veggie sausage (the kid's pick)
Tofu "chicken strips"  (strips of tofu breaded with seasoned corn and almond meal and baked), broccoli, sweet potato oven fries and rice (kid's pick)

Could I request the foccacia recipe? I've been baking a lot of it lately, but it's not as aerated as I would like, even with some extended rise-times and reduce amount of wheat flour...

Everything sounds soo good! Could you post the recipes for the enchilada casserole and the white bean, roasted garlic and kale soup?

For the soup, add kale to the recipe in VWAV. I'll post them later when I have more time.

It's the Vegan Lunch Box Tofu fish sticks recipe, but omit the kelp and the dill and add 1 tsp thyme and 1 tsp sage instead ( ... )

Yay! I remember these posts, they were fun.

I've got...
- Imam bayildi and pita Bread;
- Burmese split pea fritters and tomato salad;
- Roasted eggplant salad, zucchini-lemon couscous with pine nuts and sauteed cherry tomatoes with herbs;
- Zuppa di fagioli;
- Kung pao tofu and rice;
- Pineapple-cashew-quinoa stirfry and cucumber salad;
- Spicy tempeh and broccolini with rotelle.

Also for snacks and desserts and lunches and so on...
- Sweet and spicy candy bar;
- Avocado brioche;
- Mint smoothie;
- Ginger-sesame pasta salad;
- Fresh apricot compote with ginger and mint;
- Cardamom-tapioca pudding.
