Candy Buffet

Hello everyone!

My sister is having a Halloween-themed wedding, and I have been placed in charge of the candy buffet, which will serve as wedding favors for the guests. I am going to be making all the chocolate candies (it's SO expensive to buy "specialty" chocolate) and purchasing a few other vegan non-chocolate candies (i.e. hot tamales). So does ( Read more... )

trader joe's makes this popcorn that is vegan and delish, they use canola oil and salt. for topping the truffles, perhaps you could do a bit of orange zest on some, oreo crumbs on others (crumble up the cookies, i work in food service and have seen the packaged crumbles have non-vegan additives) or purple sugar crystals/sprinkles. also, marzipan! it's super easy to make a lot of things with that, even more so the bases for some "critters" you may be making. you can even get creative and use some dried fruit and vegan frosting to make things- i did so with a vegan "gingerbread" house and it came out great!

If you want get fancy, you can make candy sushi. Use puffed rice and vegan marshmellows to make outside. Wrap around colored strips of another candy for the "fish". Gummy candies can work for that, but if you're having trouble with that, buy dried fruit and cut into thin strips.

I work for a cafe, and I make these as a vegan dessert. They're a little like macaroons, and I think they'd be awfully delicious half-or-fully dipped in chocolate as well. These are popular with non-vegans as well ( ... )

Mmm... that looks good as well! How long would the shelf life be on these? I want to make as much as I can as far in advance without compromising the quality.

They start out very chewy -- I usually keep them refrigerated, and they become a bit stiffer over time.

I could see easily five days in advance though, without it compromising the coconutty goodness, as long as they were kept chilled.
