How about a lemon juice and olive oil sauce? or tossing cut up cherry tomatoes in basil, and olive oil? Or certain salad dressing can be made into marinades or put on pasta.

Puttanesca is wonderful without the anchovies. Just a bit of oil, lots of garlic, diced tomatoes, chili flakes and sliced olives.

When I'm by myself and just want some penne, I cut up a tomato or two, squeeze lemon or orange juice into the pan with it, add a couple flavors like garlic or lemon-pepper (I like lemon, can you tell?) and let it simmer a bit. Crush the tomato up and mix it all around in the pan while it cooks.

Pour over penne and mmm.

Also, I just noticed your edit--for sweet potato gnocchi, then, the cilantro, cranberry, orange or pumpkin versions would probably be best!
