homemade vegan lunch "meat"

I think I've found a great alternative to that expensive mock lunchmeat! (I mean really, do they HAVE to charge $4.00 for three lousy servings?) I found this on VeganDad.com and fell in love! I love vegan dad! I like this recipe a lot, though I decided not to steam it, and just bake it because I was a little worried about it being too, I don't know chewy. I guess I like my faux meats kind of dry. There is another recipe similar to this method that my family loved, the seitan o' greatness log of veg-meat. Both are excellent, and so much cheaper than buying it packaged!

I just kept it at 350 and baked it for the full cooking time of 2hrs. You could probably get away with only baking for an hour and a half or so but the full cooking time worked well for mine. :)
