Also, I tend to heat up regular canned beans and then add tomato sauce. It's very easy and yummy!

you could make a loaf and freeze in slices. or bake in patty form so they are already individual sized. so that when his meat comes out one of yours comes out. and you have your protein, no fuss.

When my hubby eats steak I eat portabello mushrooms. Either marinated in balsamic vinaigrette or rubbed with olive oil and steak spice.
I only let my hubby cook meat outside the house so he BBQs or we eat takeout otherwise we all eat vegan. This will especially be true once little one is old enough for food since she will be vegan too.

i sautee them in sherry wine, and a-1 steak sauce with fresh crushed garlic, red onions, red bell peppers and mushrooms and fresh cracked black pepper/ pinch of sea salt. VERY VERY tasty.

wow i can't believe you cook him meat! my guy has to cook and buy his own, but he knows how/has time to cook if he really wants meat.

maybe you could just continue making your vegan meals and adding meat as a side for your husband. i definitely would not go the route of fake meats because they are extremely processed and pretty unhealthy.

this greek style tomatoey giant lima bean dish is my favourite bean standalone dish. i eat it by itself or sometimes i put it into pastas or i make a soup along with it, or... anything! it's a pretty neutral tomato and bean flavour but very satisfying, so it goes with a lot of things. and honestly, i find it works better with canned whole tomatoes instead of fresh beefy ones. the flavour seems to be stronger. i don't usually have time to let it bake so i simmer it for a while until the sauce is a bit reduced and thickened ( ... )

Your "Mexican Lasagna" sounds a bit like my Enchilada Casserole. I use crumbled firm tofu that is seasoned up with Mexican spices and then I put enchilada sauce over the whole thing. It freezes okay.
