I'm planning on making chocolates for Halloween. I wanted to make some chocolate suckers and truffles.
Does anyone know if there is anything vegan I can use to color white chocolate? I want to make the suckers like
there and I thought they would look better colored like that

it's the unmelted particles that create a foundation for a nice hard (essentially "crystallized") structure, but if you melt it all the way, there is no structure to build on.
as for coloring, just don't use water based colors. (chocolate gets gross when exposed to a tiny bit of water. it's called "seizing") i haven't tried the wilton pastes, but i don't see why they wouldn't work. i don't think the glycerine would do anything too bad.
as for the truffles, check the truffles tag. there's a really nice and easy recipe using blended cashews that i highly recommend.

also, you can get powdered food colorings. add them to the chocolate or paint them on with a little oil. have fun!
