Recipe Assitance: GF Chewy Chai Cookies

Hullo! I need help!

I'm planning on baking some cookies for someone who isn't vegan but has a wheat allergy. I looked around and couldn't find a GF journal that seemed active and willing to help with recipe conversions or having a flour discussion. I've had a lot of luck working with blends of flour. Bob's Red Mill is a great resource, and a lot of more mainstream grocery stores are carrying his products. He even makes a mock AP flour that is a blended flour.

I've had a lot of luck with rice flour, but I often blend it with other flours (based on quinoa, or garbanzo beans). The trouble with GF, much like vegan, is structural integrity, without wheat gluten to hold it all together.

If you're used to working with vegan issues of cookies falling apart, this is similar. I know a few great GF cooking blogs, I'll go pull the links and post them.

If your friend just avoids wheat (as opposed to all grains containing gluten), then there's a good recipe for cookies using oat flour on theppk.com. Oat flour can be made by putting ordinary oats through your food processor, and although this will give you cookies that taste different from the normal wheat flour kind, it's not a bad-different, just different - when I made these they were gratefully received by my wheat-allergic friend, and several other omnis.

ALSO, omg dude, I picked up your accent! Heeeeelp! On the other hand, a couple Canadians were delighted I spent the weekend with a Newfie. One's from Thunder Bay and she was excited. lol

what country are you in? in the uk we have 'dove farm' who make various wheat-free flours. i use their 'plain white wheat-free flour' as a direct substitute for wheat flour in all sorts of vegan cake and cookie recipes and it always turns out great.
