Meatloaf Woes

I've been vegan for nearly four years now and I have yet to make a satisfying vegan meatloaf. Usually they taste pretty good but the texture is so mushy that they don't get eaten.

Since I am the only vegan in the house, this recipe will have to satisfy some omnis too. These omnis are very open to tofu and fake meats but not so much to vegetables. ( Read more... )

Thanks for the link. I really need to pick up the Cozy Inside cookbook. I think these guys would really go for most of the recipes in there.

more breadcrumbs? Or, alternately, some other kind of starch, like rice or quinoa?

i've done well with tofu as a base, then whole grain rice with celery, onions and carrots. a couple tablespoons of corn starch will help it stick together.

that sounds simply delectable and very meatloaf sounding (from what i remember).

i am very lazy though and all the other feminist groups are really inactive proving that women are in fact lazy as a whole so i dunno.

Molly Katzen's classic Moosewood cookbook has an amazing mushroom-carrot based meatloaf. I've made both the vegetarian (featuring eggs and cheese) as well as the vegan versions, and it is a serious crowd-pleaser, even with omnis and other picky eating types.

I'd definitely vote for using plenty of breadcrumbs.
