Vegan sugar cookies without egg replacer?

Do any of you have any vegan sugar cookie recipes that do not call for "egg replacer?" I don't have much money and I will really never use it again. Plus I really only have access to what is available at a small supermarket within walking distance of my house ( Read more... )

In my sugar cookies I just add extra rice milk and don't use replacer at all. If you can find a recipe that only calls for 1-2 eggs this works.

1/4 cup of apple sauce = 1 egg. Again, I almost always use apple sauce when making sugar cookies. It tends to be the best. (I think, at least).

I used applesauce in the ones I made yesterday. They were roll-y out and cut into shapes ones and they are good. I used this recipe http://www.vegfamily.com/vegan-recipes/desserts/holiday-sugar-cookies.htm
I added about 2 Tbs of soy milk though cause the dough was very dry. Agian, they aren't super sweet.

Usually when I make sugar cookies, the margarine and soy milk just hold it together? Like in this recipe, which I think I got from Vegan with a Vengeance:

1 c. vegan margarine, softened
3/4 c. powdered sugar
1 1/2 c. flour
1 tsp. vanilla
2 T lemon zest (or 1 tsp lemon extract, or omit)
1/4 tsp salt

Beat together the margarine & sugar, then add flour until mixed well, then stir in remaining ingredients. Cover with plastic wrap in the fridge for at least 2 hours. When ready to make, preheat oven to 325. Roll out, make shapes, etc, and bake for 6-8 minutes.

It's simple, but it's delicious, if you've got the cup of margarine :)

haha, oh yeah! no soy milk in these. it was kind of a train-of-thought comment. i know i have some other sugar cookie recipes with soy milk in them and then i just got distracted.... lol :)

just saw this...been travelling. if no one mentioned this, ener-g is only potato starch and tapioca flour. i honestly just use cornstarch to replace it most of the time...
