Do any of you have any vegan sugar cookie recipes that do not call for "egg replacer?" I don't have much money and I will really never use it again. Plus I really only have access to what is available at a small supermarket within walking distance of my house

I added about 2 Tbs of soy milk though cause the dough was very dry. Agian, they aren't super sweet.

1 c. vegan margarine, softened
3/4 c. powdered sugar
1 1/2 c. flour
1 tsp. vanilla
2 T lemon zest (or 1 tsp lemon extract, or omit)
1/4 tsp salt
Beat together the margarine & sugar, then add flour until mixed well, then stir in remaining ingredients. Cover with plastic wrap in the fridge for at least 2 hours. When ready to make, preheat oven to 325. Roll out, make shapes, etc, and bake for 6-8 minutes.
It's simple, but it's delicious, if you've got the cup of margarine :)
