As it's Father's Day coming up (in Australia) I was looking to cook my Dad a nice treat. Possibly a fairly plain cake, slice or some biscuits, but other suggestions are most welcome

Is he type 1 or type 2? Does he take insulin? I'm a type 1 (insulin dependent) diabetic, and if he is too and knows how to take care of himself and knows his carb:insulin ratio, he would be just fine with whatever you give him, as long as he takes a correct dose of insulin to compensate for the sugar. If he's type 2, I'm sure he'd be fine too, but again, as long as he knows what's in the food and if he takes proper care of himself. If you think about it, all carbs get broken down into sugar (which then has to be metabolized by insulin), so no matter what starchy/carby/sugary thing goes in a diabetics mouth, the diabetic has to keep track of him/herself.
He is Type 1, and yes you are so incredibly right. I discussed potential cake with Dad and he said he'd be able to compensate but I did make sure the cake was less sugary than usual. Thank you. :)
I created this recipe for a diabetic friend: spiced apple cake. It was pretty good. Moderately dense, but not too heavy, and quite moist. And no sugar or sugar substitute.
Oh boy oh boy this looks fantastic! Thank you for the suggestion! Just so happens I just cooked my Dad's cake and then you posted this. :( Though I think I'll make this for him in a few weekends time, he definitely deserves it. :)
My dad is a borderline diabetic, and his doctor told him that agave nectar does not affect blood sugar levels, so he could have it. I would think that your dad should ask the same question to his doctor, though, and follow that person's advice.
