Pizza Cheese

Aug 13, 2008 08:16

I'd like to make a pizza next week, but I would like to get some opinions on good "cheese" to use. I was interested in the Chreese, but unfortunately the mozzarella flavor isn't gluten-free, but I am.

So, what is your favorite gluten-free vegan pizza cheese?

If you need a specific recommendation, Follow Your Heart's Mozzarella has given me pretty good results on pizza before. But the best cheese substitutes I've ever had have all been cashew-based. You probably won't be able to find any in stores (unless you live in L.A.), but you can probably find some good recipes online.

I adore Teese. It's hard to come by, but it's the best I've found so far. My local vegan pizza place uses it and I'm in love. So far, I can only get it online.
I'm going to make a pizza this week using Cheezly's mozzarella flavor; we'll see how that goes.
Follow Your Heart is fairly reasy to find and is more than decent.

I don't use fake cheese on my pizza. I make the sauce by blending cashew butter, roasted red peppers and a little can of tomato paste, a little nutritional yeast (totally optional), some garlic and onion powder, salt and pepper) - The cashew butter makes it creamy and you don't miss the cheese even a little. Omni's even love it!

The ratio of roasted pepper to cashew butter it really to taste, but it's pretty much 1 to 1.

I usually use 1 whole roasted red pepper (or a half a jar) and about 1/3 cup cashew butter. The spices and nutritional yeast are to taste. I probably only use 1 Tbl of nutritional yeast. This makes enough for a couple 12" pizzas and some left over for toast topping later.

TEESE. i eat it even though soy makes my skin die. it's just too good.

when i don't want my pizza to make me look like a hideous monster, i mix cultured cashew cheez into the sauce and it's also reeeeeally good, just not as convincing looking.

Mmm... just the mention of Teese has my mouth watering.

I like to sprinkle nutritional yeast on my pizzas, but I have been pondering the use of the cheese in this recipe: http://blog.fatfreevegan.com/2006/09/vegan-eggplant-parmesan.html

It's kind of goopy and not stringy like cheese, but if you could make it a little more solid, it would be scrumptious. That recipe rocks!
