New to bread maker, looking to veganize recipes

Aug 09, 2008 20:42

I recently purchased a Zojirushi Mini Bread maker, and am incredibly excited about this purchase. I have been wanting to try making fresh bread, but I live in the top floor of a very old Boston house that gets incredibly hot in the summer. It's a struggle to keep the apartment a livable temperature, so there are a few months a year where using the ( Read more... )

I have the same bread machine!

I make one of the basic whole wheat recipes on a weekly basis. I sub powdered soy milk for powdered cow milk... I've never used any of the egg recipes, so I've got no clue on that one.

Oh, and instead of butter I just use canola oil.

Thanks for the suggestions! It's encouraging to hear that you use the same model frequently. I didn't know that powdered soy milk exists, I just make my own soy milk at home with a Soyabella. I'll look for it at Whole Foods tomorrow! Thanks.

Yeast in banana bread? That's weird...I've never seen it done as a yeast bread before, it's always a quick bread/cake thing. Not really relevant, sorry.

You can omit the dry milk, substitute powdered soymilk, or use recipes that don't call for it. For the butter, I always use oil or margarine. I don't see why the flax goo wouldn't work in a bread machine; most models are compatible with machine recipes (and often regular recipes) in general, and can handle all sorts of ingredients, so there's nothing inherent about flax goo in a bread maker that would be problematic. Play around and see what results you like best.

THANK YOU for those links, everythings's already vegan! I love cranberry bread. And Turtle Bread?! Omg.

By margarine, do you mean something like Earth Balance shortening? In the green boxes? What brand do you use?

No prob :) And yeah, just regular Earth Balance or Soy Garden (same stuff, same company, different packages) margarine. I don't have much experience with the EB shortening, but if you're trying to replace butter, the margarine seems like the most appropriate sub--EB comes in boxes or tubs, SG in tubs only.

What everyone else said...

Only thing I can possibly add is a slight concern that the flax mixture *might* increase wear on the pan lining if it is 'gritty' in any way.

Have fun

Good point. I might just use Ener-G to start with and see how it goes.

I've never used a bread maker, but I frequently make bread from scratch -- all you need for a basic white bread is flour, salt, yeast, and water. I would hope that a bread maker can turn out good results with that.

Yeah, I was kind of surprised by the 'dry milk' ingredient in most of the recipes. I might try omitting it and going with a simpler recipe like yours. Thanks!
