I have no idea what your situation is. But respectfully, I must interject. If your going to school and work full time, it seems like your husband should be making or taking care of dinner.

And, I highly suggest dumping beans, rice, water and vegetables into a crock pot the night before and putting it on low before you leave for work in the morning.

The thing is, he is an EMT and doesn't know yet what his schedule is going to be like (he might have the swing shift, etc.) because he's just starting out.

Not to mention he can not cook. I'm sure if I told him he were in charge, he would definitely do it, but I'm a little worried he'll burn down the house, lol.

Also, I just wanted something to bring with me because I don't want to eat dinner so late :-P

This is true.

I guess it's that *I* want a dinner, lol rather then just taking sandwiches and Luna/Lara bars. Even if he had a good schedule, I'd still be getting home at 10:15ish, and don't want to eat a full meal so late.

So far, some of the suggestions are like: Duh! I don't know why I didn't think of these things! I suppose I was just thinking I should jam pack as much vegetables in as possible without making it a stew. So far the risotto's, curries, etc. are probably what I am going to end up doing.

no worries, yeh risotto is great! theres a really good recipe for sundried tomato and mushroom risotto in vegan with a vengance that is my fave but theres so many variations and its fun to play around with! and reheats amazingly well too! :)

Check out the book Fresh from the Vegetarian Slow Cooker by Robin Robertson. Many of the dishes cook for 6-8 hours, sometimes less, in a slow cooker and turn out absolutely delicious.

Most curries (Indian or Thai) seem to require only one pot, unless of course you serve with rice. I'm sorry I don't have a specific recipe for you - I tend to just look up things online and veganize if necessary!
Also, do you have Veganomicon? There's a section of one-pot meals in there.

I second the Veganomicon - on the one pot meal section - and it also has icons next to meals under 45 minutes (if that is an option)
