Quinoa Stew with Roasted Potatoes and Parsnip

In Atlanta, there's a restaurant called R Thomas Deluxe Grill in the Buckhead area. They serve a bunch of organic, delicious foods--and have a very nice selection of vegan entrees. I'm making this right now ~ thanks so much for the recipe!

At what point do you add the onions and garlic back in? Do you add it with the corn and peas or with the potatoes and parsnips?

Nvm. I just added everything in at about the same time. It was delicious and seasoned perfectly. I'm definitely adding this to my rotation. Thanks!!
