That sounds delicious, I'm loving greens of any kind in curry at the moment and this recipe sounds really fresh tasting, going to have to try it out!

I've also used fresh spinach in this recipe. You could probably use any green you like.

so i've just started wanting to cook with fresh ginger, and i was just wondering, what do you grate it with? like, a cheese-type grater? or can you chop it with a knife, or use a garlic press? how does it work best? thanks!

I use a microplane grater - which is very fine.

The one I use was a gift - but I'm sure a quick Google search will turn up tons of options. I think I've even seen them at Target in the cooking section.
