Summer foods!

Hello everyone!

Its finally starting to feel like spring/summer up here, and I just can't bring myself to fire up the oven or even use the stove because its so hot out. So, I was wondering what some of your favourite cook-less vegan recipes for dinner-like meals are. Cold soups and such are great suggestions. The more creative the better, I'm ( Read more... )

Not sure if you have one but, once the hot weather comes and I don't wanna use the oven, I LOVE cooking with the slow cooker. You can make the best summer fresh chilis with it and not heat up the house. I love that.

*Cold cooked cous cous with fresh veggies.
*Tabbouleh
*Frozen fruit smoothies
* Rice, Asparagus and Cucumber Salad

edited to add: Oh... and if you use cold cooked cous cous for the salad instead of rice, you don't even have that little bit of cooking.

Crave salad:

Mixed greens
Crasins
Orange slices
Sliced strawberries
Sliced apples
Slivered almonds
Raspberry vinagerette

I'm trying to remember what else I put in it.

sounds delish - sometimes I like to make a salad more substantial by adding some couscous, you think it would work with this one?

Yeah I think so. This salad is pretty substantial because of all of the fruit and almonds. I find that I get pretty darn full on it.
