You're welcome! If you already have the spices, it's super cheap to make. It really was delish; my boy went back for thirds. I have a feeling it's going to become one of my staples. ;) Enjoy!

I don't have the masala, but I'm sure I can get that

oh that looks good! i've been recently looking for new recipes with kale and now everyone seems to be posting them! :)

Do you know what would be a good substitution for 1 teaspoon ground coriander and 1/4 teaspoon garam masala? i don't have eaither of those

Hmm. Both of those sort of have a unique flavor, but if you have curry, cinnamon, and cayenne pepper I bet that would taste awesome as well.

Garam masala is a blend of spices, so you could also make your own if you have some of the ingredients:
cardamom
cinnamon
cloves
black pepper
cumin
nutmeg

I hope that helps! Enjoy!

I'm not much of a cook, what is an alternative to using a Dutch oven to make this?

A large covered pot or a large covered sauté pan (i.e. frying pan with high sides) will work. :)
Before I had a lid for my sauté pan, I just used tin foil.
