Applesauce as an egg substitute

Hi, everyone. I apologize if this is a rather basic question, but I'm new to the world of vegan baking and still figuring these things out. I've seen it said that applesauce can replace an egg or two in a recipe. I've tried it myself in a cake and in brownies, and both times they turned out good enough, but rather dry and chewy. Agreed. I've been using bananas too, for things like muffins. I've been going by the 1/2 banana = 1 egg scale.

I love Ener-G Egg Replacer, too.

I find the boxed egg replacer works fine. I do use applesauce to replace some of the oil sometimes to reduce fat and that works okay but I can't think how it could ever work as a binder the way eggs are meant to.

I really like ground flaxseed.

1 tbl ground flaxseed + 3 tbl water = 1 egg. Stuff I've made this way turns out really moist and yummy.

How does it taste? Can you tell that the flaxseed is there? I've not really had it much before so I'm not sure whether tasting it would be a BAD thing, I'm just curious.

yeah. i never use applesauce. i hate the way it comes out. (actually i just use vegan recipes instead of trying to adapt omni recipes. heh.)
