I made this recipe last night :

Recipe courtesy of:

Barbecued Seitan Ribz

1 cup vital wheat gluten
2 teaspoons smoked Spanish paprika
2 tablespoons nutritional yeast
2 teaspoons onion powder
1 teaspoon garlic powder
3/4 cup water
2 tablespoons tahini or other nut butter
1 teaspoon Liquid Smoke
1 tablespoon soy sauce

What kind of flavor were you looking for in the seitan? I don't usually marinate it because it can get gooey/chewy in texture.

I freeze my baked seitan all the time--without broth--and it's fine. I use this recipe, or a variation there of, and I usually double it, so there is plenty to freeze:

I also freeze my seitan all the time and I use the boil method and the recipe from VwaV. I've never tried to freeze this recipe, but I imagine it would work fine.

I also made these a while ago, but they just didn't do it for me. I was thinking about trying them again with a different bbq sauce (as that was a big part of why we didn't like them).

I haven't tried those but I really like the Baked Seitan in Sweet and Sour Orange sauce. And so does my omni husband, he asks for it all the time. I actually planned to make that recipe with bbq sauce on it instead next time.

oh sweet! im glad it freezes well. its not that i didnt enjoy the recipe i just felt it needed more kick for my liking. i will probably play around with it and see what happens LOL.

I actually really liked this recipe - I doubled the liquid smoke, though.

I also found that if I overcooked it, the flavour seemed to disappear. For me, I don't have a grill, so I cooked it for 15-20 min, then added the sauce, then cooked for another 5-10 min.

Also, I used a honey-garlic sauce. Was very yum.
