Freezing Home-made Seitan?

I tried to find an answer to this by searching tags and memories, but without success.

A couple of weeks ago, I made a batch of seitan using the recipe in Vegan With a Vengeance. I was pleased with the results and also surprised at how easy this was to make. The only problem was using it all up within the recommended time frame (I actually went ( Read more... )

Do you use plastic bags? Tupperware-type containers? How much seitan per bag or container? When you are ready to defrost some, do you just put it in the fridge the night before you are ready to use it?

oh, sorry. I generally use tupperware. You could easily use ziplocks... freeze them flat and it will store very efficiently.

tip: only put a few pieces in each, enough for one dish/meal. I haven't tried, but I doubt it re-freezes/re-thaws well.

Mine, in a block of broth, takes about 2 days to thaw in the fridge.

I'va had good luck freezing broth-less in ziplock bags--cut into pieces small enough to easily fit one per small sandwich bag. I made an enormous batch of seitan last week and have been thawing baggies as needed with no problems.

Heh--he's the only author I know to have used "paranoid" as a verb (something like "Slothrop paranoids along the hallway" in Gravity's Rainbow). :)

I also freeze mine brothless (although I often freeze the broth separately). I've frozen in big hunks, small pieces, and most recently in strips for my slightly modified version of seitan au jus from Vcon. Amazing.
