harvest Veggie Ragout: Thanksgiving dish that everyone will love

I KNOW I posted this recipe once before, but I can't find it in the memories for some reason. This is the dish that I always make as a vegan main dish for Thanksgiving and the omnis always love it too. Approx. how many servings is this? I am thinking about using it for a family potluck. It would be my main dish but a side for others.

It serves about an army. It fills a large 5 quart dutch oven size pot.

and what exactly is dry red wine?
am I taking it too literally if I have to find a way to actually dry a liquid?

"dry" is a taste quality of the wine. I just use whatever I have in the house because I'm not really a wine snob.

Excellent, thank you! How are leftovers with this? If I were to make it a day or two ahead, put it in the cooler and drive seven hours, and reheat it at the family gathering, would it still be as nice (or should I save this recipe for a time when we're hosting Thanksgiving)?

Leftovers are awesome. Prep time takes about forever, so I was planning on cooking the veggie part on Tuesday or Wednesday and then just cook up the mushrooms before serving.

About half my icons came from the icon communties, so feel free to take them for yourself.

This is kind of a silly question, but is the tomato paste essential? Could i add part of a tomato or something instead? I hate throwing out the rest of the can because i can't ever find something to use it in.

Well the tomato paste makes sort of a tomato sauce. You could probably replace it with tomato sauce, or if you're smart enough to make sauce from tomatoes that's cool too. I always fail at making sauce from tomatoes.
