Wild rice and cranberries go great together; that way you can have the traditional cranberries, too!

It should be pretty easy.. cook the rice; saute some diced onion, add in some basil and thyme, and toss in the cranberries at the very end. Toss that with the rice and you should be set! Chopped walnuts could be very tasty in, as well.

I make this but instead of cooking the rice in plain water I use veg stock for extra flavour.

Also tastes good with in addition of finely chopped celery and mushrooms, and sometimes almonds instead of walnuts. Very yumm.

Buckwheat makes a great stuffing also.

Maybe a cranberry something is a good idea. VeganYumYum has a good recipe for homemade cranberry jelly http://veganyumyum.com/2007/10/jellied-cranberry-sauce/

i'm omni and i've found that the best way to veganize something and make it good to people who aren't vegan is add lots of earth balance... cause that stuff's amazing and greasy food's really good. i'm not sure how that works for a candida cleanse... that's going to be tough since you're not supposed to have: salt, sugar, wheat, any carbohydrate really (even too much fruit), caffeine,... anything fun or tasty? it's a bitch, but i don't know how strict your mom is being. rice usually isn't allowed to my knowledge... sauteed vegetables would work but anything catering to a candida cleanse is not going to be the life of the party. but if she's not too strict then the wild rice stuffing sounds good and add lots of earth balance & tasty greens!

roasted asparagus is always a crowd-pleaser. toss the spears in some canola oil, sprinkle with salt and pepper, and cook at 350 until softened and limp. they have a nutty/buttery taste that goes great with any meal.
