Vanilla Slice / Napoleon / Mille-feuille

Help! I ate these (vegan) all weekend, and am now having withdrawal symptoms! Does anyone have a good recipe? :-) I would love you forever more...

I'm trying to get the recipe from the baker who did them over the weekend. If I succeed, I'll post it too...

I do a mille-feuille but use graham crackers instead of, well, mille-feuille. :)

I don't have the recipe on me, and truthfully, it is undergoing a revamping now that I am working on a vegan Chantilly almond cream.

Essentially what I do is:

* A layer of (honey free) graham crackers
* topped by a layer of chocolate pudding
* topped by a layer of graham crackers
* topped by a layer of either custard or Chantilly cream
* topped by a last layer graham crackers
* topped by a layer of white icing, then you draw lines with a brown icing (made with some reserved white icing mixed with either coffee extract or cocoa powder, depending on your tastes), and then cross them with a butter knife of the end of a spoon (this is difficult to describe without picture).

Then, you let it chill in the fridge until it sets. I like it better even the second day sometimes (if any makes it to the second day!).

You can, of course, replace the graham crackers with puff pastry (just replace the butter with something like Earth Balance) for a more ( ... )

it is obvious you are in prague from your post but hey! anyone in los angeles! if you want the most delicious banana chocolate mille-feuille go to the m cafe on melrose!

it is superb! and macrobiotic, so made without refined sugar. i still can't figure out how they make it so perfect!

her post immediately reminded me of m cafe. heaven! you live there? jealous!

i'm not at all ashamed to say that once i'm ready to move from portland, los angeles is a definite contender, almost solely because of m cafe and RFD. i was just there in june, and i'm kicking myself for not trying the sacher torte. chocolate apricot, yummm.
