I'd probably open it in the Artsy West End. Either Queen West, Bloor West or College.

when I lived in Toronto I would have eaten there constantly! This is a great idea and I know a lot of vegan and non-vegan people in Hogtown who would be very supportive of this.

i live in toronto and would totally eat there. i miss mac and cheese. i also love old school diner atmosphere...like the vesta diner (bathurst/dupont), except they're very meat-o-centric, like with the really long counter and stools and a big grill just behind the counter.

I'd definitely eat there. I'm from Hamilton, but I frequently go to Toronto.

I've actually considered this myself, as something for my future. I'm planning on attending George Brown for chef training next year, but it's my ultimate goal to become a vegan chef.

Does George Brown offer Vegan cooking classes? I always am considering going to school for some extra help but I will not work with meat or meat products so I haven't been able to figure out what to do.

GB's one year chef training course does involve working with meat/animal products. They do offer a continuing ed certificate for vegetarian cuisine, but it's not exclusively vegan, at least not that I know of. Someone really should offer a vegan option.
