Ooh maybe some sort of hashed-brown casserole? Shredded potatoes and diced veggies topped with fake cheez? I've seen fake cheese made from rice or nuts before, or you could make your own!

I vote for home fries! Or biscuits! Or muffins, which can be savory or sweet. Or a nice loaf of bread, with spreads.

Is tofu also out? If not, a scramble could be good.

well brunch is a mix between breakfast and lunch. but more of breakfast foods. but it's not like a meal- you just pick at stuff- more apetizer style for a number of hours.

you should make some mochi, any type of salad- like fruit salad/ potato/macaroni... muffins would be good- like whole grain muffins... even stuffed mushrooms! some pita with hummus or even a bunch of vegies and a dip. or some celery and peanut butter.

scones would be a good idea but you might still be hungry for something of substance. even a simple caserole would ge good.

if you do make something with soy in it- just let them now incase someone has allergies.

my favorite brunchy meal that i make all the time is based off what i used to order from herbivore when i was on my san fran vaca last september. i believe it was called "southwestern breakfast":

scrambled tofu (i fry onions, red pepper, garlic and jalepenos. add smushed tofu that has been mixed with tumeric and nutritional yeast to desired flavor/color)
black beans (from the can, slightly drained. i add crushed red pepper to mine because i love all things spicy as heck)
fresh salsa (diced tomatoes, hot peppers, purple onion, cilantro, lime juice, salt)
and/or fresh guacamole....or just sliced avacado.

sooo good.
i think at herbivore they had vegan cornbread and sourcream to go with it too...
