Okay I retract my previous statement. I just had a look at a white cake recipe that I have. It also bakes on 350 for 20 minutes for cupcakes. For a cake it says 25-30 minutes. My only advice is to make sure that you'll have enough batter for a cake. This yields 26 cupcakes and makes 1 cake from 2 9" pans.
I don't have VCTOtW so this recipe may be spot on as far as batter is concered but it's certainly worth double checking.

it should make a 9x9" cake. i usually convert recipes in the opposite direction (turning cake mixes into cupcakes) and for a recipe which is supposed to yield one 9x9" cake, i end up with about a dozen cupcakes. so a recipe for a dozen cupcakes should yield one 9x9" cake! for the longer rectangular cakes, i usually find they make about 15-16 cupcakes, so if your cake is larger you may want to increase the amounts in the recipe by about one half.

Thanks! You're right I wouldn't have had enough. I assumed that I would since I've made Jennifer Schmoo's white cupcake recipe as cake before, but now that I look at it, that is for 22 cupcakes. I ended up doubling this one, and it was fine.

Usually for cakes it is about 10ish minutes more but just to worn you a lot of vegan cupcake recipes will collapse ion the certain if the don't say they can be turned into a cake. I don't have the book so I don't know how the recipes are with this point so might want to plan a back-up.

I have the book, but in all honesty, I have a favorite failproof chocolate cake recipe that's quick and easy. I made it this Christmas for my omnivore family and they loved it. I iced it with the cream cheese icing from the book and topped it all with shredded coconut. It's from this thread, in the comments.

Awesome Chocolate cake with no tofu, soy milk or other 'weird' vegan stuff!
· 3 cups unbleached flour
· 1 1/2 cup sugar or other sweetener
· 1 tsp. Salt
· 2 tsp. Baking soda
· 6 tbsp cocoa powder
· 2 tsp. vanilla
· 2/3 cup vegetable oil
· 2 tbsp vinegar
· 2 cups cold water

Preheat the oven to 350 degrees F. Combine the flour, sugar, salt, baking soda, and cocoa powder in a bowl and stir with a fork until mixed. Make a well in the center and add the vanilla, oil, vinegar, and water. Stir with a fork until well mixed. Pour into a 9x9-inch baking dish (or cupcake pan), and bake in the preheated oven for 30 minutes, until a toothpick inserted in center comes out clean.

Thanks! I came back from putting the cakes in the oven this afternoon to see you're comment and thought 'oh darn!' - I posted this last night but I'm still modded so it didn't appear until much later. I'll have to try it next time. The doubled cupcake recipe turned out just fine as cake though - just a tad too dry around the edges, but that might have been because I cooked it just a couple minutes too long.

cupcakes (especially isa chandra cupcakes!) are made to be fluffy and moist in the smaller form (as they have different cooking times and more outside area to cook than a sheet cake), so I will warn you that using a cupcake recipe for a cake may cause for a depressing collapse (literally).

last time I tried, my cake was dry on the outside and super gooey in the middle. you should probably plan a backup or find another recipe specifically for cake!

Thanks. It was a little dry on the outside, but that might have just been due to baking a couple of minutes longer than it should have. But it was yummy, so I still consider it a succes :)
