Probably not, but it adds to the creaminess. The original recipe actually called for 1/2 cup, (of butter, along w/ 1 cup of heavy cream - eek) but I thought that was a little nuts so I halved it and it was still quite tasty. It actually makes quite a bit of soup, though - maybe 2 quarts? - so the fat content per serving actually shouldn't be too bad, maybe about 1 tsp per serving.

It sounds good! Just curious as to if I'd really need to put in that much butter substitute?
