Cookie-cutter pumpkin cookies

I've found recipes for pumpkin cookies, but they just say to spoon onto the tray to bake. Being that I don't cook much, I'm not sure if I can take those recipes and just roll them out to use with cookie cutters. If not, does anyone have a pumpkin cookie that can be used with cookie cutters? Or would I be able to modify a sugar cookie recipe to ( Read more... )

generally, the dough needs to be more dry (as opposed to all smushy) to let it roll out, so recipes that are actually made for cookies to be rolled out have more dry ingredients, mainly flour. so for any cookie recipe, if you add a little more flour (not too much because you will add flour when you roll it out onto a floured surface) it will be cookie-cutter friendly. look around at sugar cookie recipes that are specifically for cookie cutters and ones that aren't and see the difference in flour.

any spooning cookie dough is going to be too mushy and sticky to roll out and cut.
