hmmmm that looks yum. i dont think you can get kale where i live though, do you think it could be made with something else, like ummm cabbage? i've never had kale so i dont know.. thanks! :)

I'm sure. Cabbage, no I think cabbage has too strong of a taste (and smell) when cooked. But any dark green would work - spinach, swiss chard, beet greens....

I really, really like the African Peanut and Sweet Potato Stew in.. I think It's Vegan Planet.. I'll have to check and make sure. Either way, I make it pretty much according to the recipe, except I like to add kale :D +10 to delicious.

Peanut stew is one of my all tiem favorite main dishes. I don't follow a recipe.

I begin with sauteing onions and garlic. Then I always add carrots, red and green peppers, potatoes, and when its all done, cubed firm tofu.

If I have it I add seitan, green beans, and mushrooms too.

I add a 28oz can of crushed/stewed tomatoes.

Then I tend to use about 4 cups or more of veggie broth to every 12 or 16 oz jar of peanut butter (crunchy style). One jar of peanut butter makes a huge amount.

Add salt, pepper, cayenne, oregano, whatever else you want for spices.

Serve over rice. Yum, i'm hungry now!

Someone posted a recipe some time ago for a West African dish called Domoda. This is my reinterpretation of that recipe, and I've been thinking about making it myself, now that the temperature has dropped:
