Yay! I fell in love with Caldo Verde when holidaying in Portugal. And yes, finding veggie versions over there was hard, but possible. I have often thought of that soup and wondered how to make it. My own attempts didnt work out very well, so I shall try this recipe. Thanks :)

1. "I have loads of portions in the freezer" - I didn't think that it was possible to freeze potatoes at home. Does that work well for you?

I've never had any problem freezing portions of potato at home, whether in soups and stews, portions of mashed potato, or in pasties.
