fluffy mousse

Is there any way to make fluffy vegan mousse using more common, basic ingredients like tofu, agar, flax goo, etc? I know there's Hip Whip and the aseptic Soyatoo that mimics whipping cream, but those things are kinda pricey/hard to find. It seems all of the "mousse" recipes I find (silken tofu + melted chocolate) are really more like pudding, too ( Read more... )

If you have a good hand mixer you can really fluff up the silken tofu/melted chocolate chip recipe into something wonderful. It just takes 5 or so minutes of fluffing.

I remember mine being pretty fluffy for a day, it never lasted longer than that though!

the non-vegan whipped cream mousses never lasted longer than a day, either.

i love my kitchenaide standmixer now, so much, because it can do this whipping thing like my hand mixer never could. it is a goddess. :)

My chocolate mousse is pretty much just choc and silken tofu, and it's never failed me yet!

I make it by melting dark choc in a bowl over boiling water with some soya cream and a good dollop of golden syrup - that makes the chocolate a bit more goopy and less solid in the first place! I find mixing it well (until it bubbles) in a blender leaves it at perfect mousse consistency - might be a bit harder if you're mixing by hand though?

What's soya cream? Like thicker soymilk? (I've seen so many different references to "soy(a) cream that I'm never sure what the person's referring to!)

It's like thicker soya milk, but the stuff I use is marketed as cream. I assume it's just got more soya beans and less water in!

Although I'm pretty sure mine says Soya Cream on not Soya Dream, but I think it might be the same thing.

Probably the recipe would work with soya milk if you didn't use too much.
