raspberry blackout cake

Does anyone have a recipe for the "raspberry blackout cake w/ganache frosting"? I know I saw it in the Vegan with a Vengeance book and I want to make it for my friend tomorrow, but I can't find the darn book for the life of me! Even if it's not the exact recipe, some other type of cake similar to it, perhaps ( Read more... )

CAKE
1 1/2 cups all-purpose flour
1/2 cup Dutch-processed cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups plain rice or soy milk
1/2 cup of canola oil
1 (10 oz.) jar raspberry preserves (reserve 1/2 cup for batter)
2 teaspoons vanilla extract
1 1/4 cup sugar
Fresh raspberries for decorating and yuminess

I know what you mean. I'm a Korean adoptee and I'm just now really getting into learning about Korean culture. I just found out that what I usually get at restaurants has beef broth in it. Culture vs personal beliefs is tricky for me ( ... )

yeah. i know allll about the beef broth! depending on which restaurant you go to, you still have to be pretty careful. almost all of the dishes you mentioned above can be slipped with meat. i know my mom, for example, likes to put beef in the bibimbap and japchae.
also in a lot of instances, kimchi is made with oysters or some other seafood for taste.
i really want to made a lot of the soups, like yook gae jang, or kim chi jji gae, but it's just not the way mom used to make. :(
oh wells, i guess that can't be helped.

good luck with your exploration of the korean culture! there are so many beautiful and respectful things about it that i hope you get to see. :)

I haven't tried a ton of the recipes, but the oi kimchi and the duk bok gi were yummy (a Korean friend agreed!).
