Satay Pizza!

Tomorrow is shopping day, so I had very little in my fridge when I popped my head in this afternoon. A few mushrooms, half a block of extra firm tofu in the freezer, half a bottle of satay sauce and a few spring onions (aka eschallots), and about a tablespoon of tomato paste. Inspiration hit!

what brand satay sauce did you use?

most of the stuff i find has shrimp paste in it :|

I use an Australian brand, Masterfoods. But a lot of the time when I want satay sauce (which is often - satay flovoured anything is amazing!) and there's none in the fridge or pantry, I simply whisk together about half a cup of natural peanut butter, about 3 tablespoons of soy milk, and good dash of Indian curry powder and season with salt and/or sugar to taste. If this is too thick, I add a little warm water, or if it's too thin I simply add more peanut butter!
