I'd try combining the chestnut paste with cocoa or chocolate to make something Nutella-like to spread on bread.

1. I think the cranberry sauce sounds great, let us know how it goes.

2. The only thing I could think of would be to make a light batter and deep fry balls of it. But that may not be the healtiest option.

my grandma uses the chesnut stuff to make a very nonvegan mousse/souffle--maybe you could try a vegan version? sorry, i don't really know how to go about it, but if you figure out a way let me know--i really miss it!
