Generally, I just make a basic cake recipe, and either bake it in two thin layers (or bake one layer and cut it after it cools).
Freeze the cake layers - it makes them less likely to break. Take your softened ice cream and cut the container away from the ice cream. Then I usually use a knife to cut the ice cream into slabs - it is usually not soft enough to just spread. Arrange the slabs on one layer of cake, using a spatula to spread it even and meld the ice cream together. Place on the other layer of cake on top. Frost however you like. I like a traditional frosting, but you can also whip soy ice cream in a blender and frost with that.
It's really just like any ice cream cake - take any cake recipe, any ice cream, and build the cake.
i've just baked a cake in the regular cake pan and then softened the ice cream and smoothed it into the other cake pan and then put it back in the freezer. when it was all done, i put some hot water in a tub and then took the ice cream cake pan and held it in there (obviously not letting water get in)for a couple seconds until you can tip it over on the cold baked cake. put the assembled cake back in the freezer until well frozen and then frost it with some softened ice cream or whatever. yum!
